Most apps have you draw one giant character with your finger, across the whole screen. Nobody writes like that in real life. Kakimichi does the opposite: you write with the Pencil, at real size, wrist resting, just like a proper notebook.

Kakimichi
Boxes of 10, 12 or 15 mm, just like a proper notebook. You write with your wrist down, and that's the movement your hand remembers.
By default only the Apple Pencil writes, so you can rest your palm on the screen without setting anything off. Double-tap to switch to the eraser.
The boxes measure actual millimetres, whichever iPad you use. You practise at the size you really write at.
Not one lone kanji filling the screen, but whole words and sentences, box after box, like the lines of a schoolbook.
The method
Every stroke you write is compared with the reference: shape, direction, order, strokes missing or left over. Get it all right and you earn the maru, just like on a Japanese exercise book.
The model (お手本) guides your first attempts, then fades as you review, until you're writing entirely from memory.
A short session every day: review the characters that are slipping, learn a new one, then finish with a dictation. Once it's done, it gets stamped with a hanko.

The app reads it out, you write from memory in the boxes with no model in front of you. Three difficulties (楽 gentle, 中 normal, 難 hard) and vocabulary you can set from JLPT N5 up to N1.
Writing quizzes by section, reading quizzes on words, yōon tables, and chains of words and sentences so you write every character in context.
Hiragana, katakana, then the kanji in Japanese school order: grades 1 to 6 (kyōiku) and the 1,110 jōyō of junior high, sorted by how often they turn up.
